Halloumi and veggies on the grill

GRILLED HALLOUMI WITH BROCCOLI MUSHROOMS AND POTATOES 

Back in Cyprus there is one thing I developed a great fondness for, the famous Cypriot cheese Halloumi. This semi-hard cheese with a savoury taste is made from a mixture of sheep's and goat's milk. It can be grilled, barbecued, fried and it is because of this versatile nature it fits into a wide range of recipes, from a salad , a snack or a sandwich to a lot of main course dishes. I was experimenting with this beautiful thing and invented this quick healthy flavourful recipe using halloumi. Marinated and grilled veggies and halloumi paired with brown rice or pita bread is just right when you are in a mood to have something healthy yet delicious.

Here goes the recipe...

GRILLED HALLOUMI WITH VEGGIES

Serves 3
Cooking time 15 to 18 mins

INGREDIENTS 

Low fat Halloumi  270 gm
Button mushrooms cut into halves 250 gm
Broccoli cut into florets 340 gm
Potatoes sliced lengthwise 2 medium

Marinade:
White pepper powder 1/2 tsp
Dry crushed thyme 1 tsp
Red chilli flakes 1 tsp
Garlic powder 2/3 tsp
Onion powder 1/2 tsp
Salt to taste
Olive oil 1 tbsp

1/2 tbsp Oil for grilling

METHOD 

In a large bowl mix together all the veggies and cheese along with the ingredients for the marinade and set aside. Coat grill pan with 1/2 tbsp oil evenly and heat the pan. Once the pan is hot put the cheese and vegetables on the pan and grill around 7 to 9 mins each side. Once done remove from pan and serve.
