RED CHILLI PEPPER CHICKEN WITH BABY CORN

Today's recipe from my diary is an Asian flavor inspired beautiful combination of chicken breast , red chilli pepper and baby corn. Chicken goes very well with chilli peppers of all varieties from mild to hottest. In this recipe I have used the large red chilli pepper which is mildly spicy and is more towards the sweet side with less heat. In case of chilli peppers it is always like larger the size, milder is the chilli and smaller the size more hot it is. Apart from the chilli there is baby corn another great pairing for boneless chicken. So go ahead and surprise your family with this delicious recipe. Also a great idea for those who are planning to cook a romantic dinner for their partner today.

Here goes the recipe...

RED CHILLI PEPPER CHICKEN WITH BABY CORN

Serves 3
Prep time 10 min
Cooking time 15 mins approx

INGREDIENTS

Tender chicken breast 600 gm
Baby corn 8 to10 pieces
Large red chilli 1 (0.04 kg approx)sliced
Onion powder 1/3 tsp
Chilli garlic sauce 2 tsp
Thai red chilli sauce 2 and a 1/2 tsp
Oyster sauce 1 tsp
Sesame seeds 1 tsp
Refined flour 1 tbsp
Salt to taste
Water 110 ml
Oil 3 to 4 tbsp

METHOD

Cut chicken breast into small pieces, sprinkle flour and roughly coat the chicken pieces with it. Cut baby corn into halves. Now heat the entire oil in a pan or wok, once oil is hot start frying the chicken pieces. Fry chicken till you see that a nice and light golden brown crust is formed and chicken is tender. Remove chicken pieces from oil and in the same oil fry baby corn for 2 to 3 minutes. Remove baby corn and keep aside. Now use the same oil, reduce heat little, and put chillies and sauté few seconds, next put onion powder, chilli garlic sauce, thai sauce, oyster sauce, salt and water and bring the sauce mixture to a boil. Once the sauce starts boiling and thickening add baby corn and chicken pieces, stir well and cook the chicken and baby corn in the sauce till sauce reduces to 1/4 th its volume and coats the chicken pieces. Remove from heat, garnish with sesame seeds and serve.

  1. Ahhh! You made me hungry!!! I like that the recipe is simple and the cooking time is fast. I’m not a fan of baby corn, so I’d probably substitute it with something else. Maybe green pepper. Anyways, awesome post!
