One pan macaroni with chicken and broccoli

MACARONI WITH CHICKEN AND BROCCOLI
Easy one pot, one pan or one casserole meals are just right when you want to prepare those quick, easy and comforting recipes for you and your family. Just combine all the ingredients in one pan and you are good to go. Saves time, less effort required and less dishes to be washed. I think its a great idea when you want to do some stress free cooking and I am going to share with you one such recipe from my recipe diary. It is healthy, it has the goodness of chicken, superfood broccoli and durum wheat macaroni.

Here goes the recipe...

MACARONI WITH CHICKEN AND BROCCOLI

Serves 3 to 4
Prep time 10 mins
Cooking time 15 to 20 mins approx

INGREDIENTS

Macaroni 250 gm
Tender chicken breast cut into bite size pieces 350 gm
Broccoli cut into half florets 350 gm
Sliced garlic 3 cloves
Strained tomatoes 6 tbsp
Sweet corn kernels 4 tbsp
Dry basil 1 tsp
Paprika powder 1 tsp
Red chilli powder 1/2 tsp
Tomato ketchup 1 tbsp
Chopped dil herb 1 and a 1/2 tbsp
Water 650 ml
Oil 2 tbsp
Salt to taste


METHOD

Heat oil in a pan, add garlic, saute for a few seconds and then add chicken pieces and fry chicken till it turns white in colour. Now add macaroni and 650 ml water, bring it to a boil , then cover the lid and let the ingredients cook till volume of water is reduced to half. At this time add broccoli, corn, strained tomatoes, basil, paprika, chilli powder and salt. Mix, cover the lid and cook till macaroni becomes soft and some soup still remains in the pan. Now add ketchup and dil, stir and cook for a minute more. Remove from heat and serve.
