Hello everyone and welcome back to my blog. Apologies for not posting any recipe since a while, reason being I was away for vacations in the beautiful land of Cyprus.
Now that vacations are over, let me get back to sharing my recipe diary with you all ☺. Today's recipe is a quick and easy veggie dish of mushrooms and sweet corn with the goodness of butter, the nuttiness of peanuts, aroma of garlic and just salt and pepper as seasoning . It is so simple yet delicious that you would want to make it again and again.
Here goes the recipe...
BUTTER GARLIC MUSHROOMS WITH CORN AND PEANUTS
Serves 3
Prep time 2 mins
Cooking time 6 to 8 mins
INGREDIENTS
Sliced mushrooms 250 gm
Sweet corn kernels 5 tbsp
Shelled salted peanuts 2 tbsp
Sliced garlic 4 cloves
Pepper 1/3 tsp
Salt to taste
Chopped coriander 2 tbsp
Butter 1 tbsp
Oil 1 tbsp
METHOD
Heat oil in a pan and then add garlic and saute for a few seconds. Next add mushrooms and corn and saute till mushrooms turn almost tender. Then add butter, salt, pepper and peanuts. Mix well and saute for 2 minutes. Lastly add coriander, mix and saute for a minute. Remove from heat and serve.
