MUSHROOM YELLOW GRAVY

Hello all! Today's recipe is a mushroom gravy from my mom's kitchen.

This recipe uses curd as the base ingredient for the gravy. Mushroom curd gravy is a delightful combination of mushrooms, curd gravy and aromatic Asian spices. Curd gravies are delicious and you do not require much oil to cook curd based gravies. These gravies taste delicious and you can enjoy them with rice or bread of your choice. I personally love having this recipe with steamed white rice.

MUSHROOM YELLOW GRAVY

Serves 4
Prep time 10 mins
Cooking time 30 mins

INGREDIENTS

Mushrooms cut into halves 200 gm
Onion finely chopped 1 medium
Curd 400 gm
Ginger garlic paste 2 tsp
Cloves 3
Green cardamom 3
Cinnamon 1 inch piece
Aniseed powder 1 tsp
Turmeric powder 1/2 tsp
Red chilli powder 1/2 tsp
Mint powder 1 tsp
Oil 2 tbsp
Water 1/4 cup

METHOD

Heat oil in a pan. Add ginger garlic paste and saute for a few seconds. Next add onions, cloves, cardamom and cinnamon and saute till onions turn slightly brown. Now add mushrooms, aniseed powder, red chilli powder and turmeric powder and saute till mushrooms turn almost tender (about 2 minutes).

Next step is to prepare the curd for the gravy. Take a pan, put curd in it and beat the curd well. Now on medium flame boil the curd till it reduces to half its volume stirring continuously. Once the volume is achieved, pour mushroom mixture into the curd, add mint powder and water. Boil for 2 to 3 minutes more. Remove from heat, garnish and serve hot.
