MUSHROOM MATTA FRIED RICE

Hi everyone. So today's recipe is a mushroom fried rice, but with a twist. I am going to make the fried rice using a different kind of rice today, and that is Matta Rice. Also known as Rosematta rice or red rice, is locally sourced from Kerela in India. It possesses a fine earthy flavor. It makes a great accompaniment to lamb and beef. Besides its unique taste, it is packed with loads of nutrients. With increased quantities of minerals, vitamins A and B, fibre and more, Matta rice contributes towards a healthier diet. A great source of magnesium, reduce risk of heart diseases due to low content of fat saturated fat and cholesterol. Decreases risk of diabetes and keeps your digestive system running smooth due to its high fibre content. Which also means that it leaves you feeling full even when you eat less and hence it is just the right thing you need to help you lose weight. It also is a great source of calcium. So now that you know its enormous health benefits, you can switch to eating Matta rice and stay fit and healthy.

In this recipe I am using one more magic ingredient and that is fenugreek which will impart a beautiful aroma to the fried rice.

MUSHROOM MATTA FRIED RICE

Serves 2 to 3
Prep time 10 mins
Cooking time 15 mins

INGREDIENTS

Cooked matta rice 3 cups
Sliced mushrooms 200 gm
Chopped onion 1 medium
Chopped garlic 3 cloves
Red chilli flakes 1 tsp
Black pepper powder 1 tsp
Dried crushed fenugreek leaves 1 tbsp
Salt to taste
Oil 2 tbsp

METHOD

Heat oil in a wok. Add onions and garlic and saute till onions turn translucent. Next add mushrooms and saute for a few minutes. Now add red chilli flakes, pepper, salt and rice. Mix well and fry the rice for 6 to 8 minutes. Now add fenugreek in the end, mix well and fry for another 1 to 2 minutes. Remove from heat and serve hot.
