Ginger chicken with thai flavours

THAI CASHEW CHICKEN |
Thai food is famous worldwide. The characteristics of Thai food depend on who cooks it, for whom it is cooked, for what occasion and where it is cooked to suit all palates.
I prepared a simple chicken recipe few days back using ginger, soy, thai red sauce and a surprise ingredient in the form of cashew to give it a nutty flavor.
Here goes the recipe...
THAI CASHEW CHICKEN
Serves 4
Prep time 15 mins
Cooking time 20 mins
INGREDIENTS
Boneless chicken breast thickly sliced 500 gm
For marination:
Ginger garlic paste 1 tsp
Vinegar 1 tsp
White pepper powder 1/4 tsp
Salt to taste
Other Ingredients:
Roughly chopped cashews 8 to 10
Chopped ginger 1 tbsp
Red chilli flakes 1 tsp
Sesame seeds 1 tsp
Soy sauce 3 tsp
Thai red chilli sauce 3 tsp
Salt to taste
Oil 2 tbsp
Water 1 and a half cup
Cornflour 3 tsp mixed in 2 tbsp water
Some more cashews and sesame seeds for garnishing
METHOD
Mix together chicken and marination ingredients and keep chicken marinated for at least 1 hour.
Heat oil in a wok, add chicken pieces and fry till chicken turns white in color and is half cooked. Now add ginger and red chilli flakes and saute for 2 minutes. Next add soy sauce, thai sauce, sesame and cashew and saute for a minute. Now add water, salt and bring it to a boil. When water starts boiling add cornflour mixture. Let the gravy thicken. Once gravy is thickened to desired consistency, remove wok from heat. Dish out the recipe, garnish with cashews and sesame seeds and enjoy eating with rice of your choice.
