Vegetable cutlet, a very popular snack item, ideal as a light afternoon snack or it can be kept inside a burger bun. It serves as a great vegetarian appetizer.
Let us make a simple veg cutlet today, mild spicy, a great combination of potatoes, green veggies and cottage cheese. It is slightly crisp from outside, tender inside and tastes delicious.
Here goes the recipe.
MIX VEG CUTLETS
Serves 3 to 4
Prep time 30 mins
Cooking time 15 to 20 mins
INGREDIENTS
Cottage cheese 100 gm
Potatoes 50 gm
Carrots 50 gm
Peas 50 gm
Cauliflower 50 gm
Green Beans 50 gm
Chopped green chillies 2 to 3
Chopped coriander leaves 2 tbsp
Breadcrumbs 2 tbsp
Black pepper powder 1/4 tsp
Cumin powder 1/2 tsp
Garam masala/ Vegetable masala 1/4 tsp
Salt to taste
Oil for shallow frying
METHOD
Crumble cottage cheese and keep aside. Steam or boil the veggies (potatoes, carrots, peas, cauliflower and beans) till they become tender or almost done. Mash the steamed veggies. Now take a bowl and mix together cheese, mashed veggies, green chillies, coriander, pepper, cumin powder, veg masala, salt and bread crumbs (aid in binding). Now make patties out of this mixture. Heat oil in a pan and shallow fry the patties till they turn slightly crisp from outside. Serve hot with tomato ketchup or mint dip.
